It’s the third location of The Shady Family, alongside The Shady Fox and The Shady Flamingo, and the moment you step inside, you’re transported to Birmingham’s speakeasy atmosphere with some serious contraband cocktails on the menu. The team at The Shady Pig decided to disregard traditional cocktail-making rules and opted for a creative, experimental approach, making their own ingredients such as spirits, tinctures, syrups, and using techniques like distillation, infusions, barrel-aging, and fermentation. The result is impressive. Our personal favorite is The Shady Pig’s innovative take on the Pina Colada. It’s a deconstructed version of the classic cocktail that retains its typical flavors and ingredients while incorporating experimental and multi-layered elements. However, we suggest starting with Potato Head’s most famous cocktails, such as the Kookaburra, which is bright and herbaceous with passionfruit foam, and the Flores Margarita, which exudes a paradise island vibe. Nevertheless, our personal favorite is the Bali Island Iced Teapot, which is both spicy and fruity. This cocktail includes mango, tea, and cola, which is then smoked and enhanced with vodka, gin, rum, pineapple arak, and orange liqueur, making it a delicious and powerful concoction.

The Bali Mary at The St. Regis Bali Resort – Nusa Dua – Were you aware that The St. Regis New York’s bartender Fernand Petiot came up with an exceptional recipe for a vodka and tomato juice cocktail in 1934, which he perfected at the King Cole Bar? This cocktail, known as the Bloody Mary, has now become a well-known drink and remains the signature cocktail of The St. Regis resorts, including the Bali location. The Bali Mary, a tropical version of the classic cocktail, is created using Jicama, a fruit that is highly regarded in Indonesia, and refreshing cucumber, giving it a unique flavour that takes you back to Indonesia’s early years. The cocktail is mixed with Absolut pepper vodka, jicama, cucumber, brown sugar, tomato juice, lemon, and various spices, and is best enjoyed with The St. Regis’ famous Sunday brunches.

Wild Turkey Negroni at 40 Thieves – Seminyak – To discover where Bali’s insiders spend their weekends, visit the dimly lit atmosphere of 40 Thieves, a speakeasy reminiscent of New York and known for its expertly crafted cocktails made by award-winning mixologists. One of their notable creations is a take on the classic Negroni that substitutes the gin with the powerful and complex Wild Turkey Bourbon. It also features Cynar, an Italian bitter made from artichokes, and Carpano Antica Formula, a luxurious sweet vermouth with a strong body. In addition, this Negroni is “thrown” rather than stirred to aerate, chill, and maintain its potency. Forget about diluted drinks – this is a daring and seductive rendition that may even surpass the original.
